Here we share one of our favourite recipes of the day
Ayurvedic Pumpkin and Lemongrass Soup

Pumpkin and Lemongrass Soup

Servings: 4

Ingredients

1 C Yellow Pumpkin, boiled and pureed
2 C Vegetable Stock
1/4 C Coconut Milk
1 Tsp Garlic
1 Tsp Refined Oil
1 Tsp Lemongrass
2 Leaves Kafir Lime
Salt, to taste
1 Pinch Sugar

Instructions

Heat oil in a pan.
Add garlic, lemongrass and kafir lime leaves and saute
without browning garlic.
Add vegetable stock and let it simmer for few minutes.
Now add pumpkin puree and let it cook for few minutes.
Add salt and sugar.
Finish with coconut milk and serve.
